Vegan Green Bean & Cherry Tomato Salad


This salad is a great side dish to compliment any main dish.


1 x 500g frozen green beans:  cook in boiling salted water for 8 minutes until tender and then immediately strain and put into a bowl of iced water (this stops the cooking process and helps keep the colour vibrant)
4 cups of cherry tomatoes (try the seasonal coloured tomatoes now in the shops.  They are very tasty and sweet)

Mix the beans and tomatoes together in a big salad bowl and serve with a simply lemon dressing.

Simply Lemon Dressing

1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1 tbsp toasted white sesame seeds
Salt & pepper to taste
Optional:  grate 1 garlic and add to dressing

Whisk all the ingredients and drizzle on top of the salad.
