This is a really quick and easy salad recipe to whip up in no time. It is not only tasty and moist, it is packed full of protein from the nutritious walnuts which we add toasted for that extra bite or plain.

Serves 2


1/2 cup walnuts (dry toasted in a frying pan if desired)
1/2 block of vegan feta (I use Violife)
2 pears, peeled if desired and diced into bite-size pieces
1 pack of mixed green salad leaves
Handful of cherry tomatoes, halved


Juice from 1 lemon
1 tbsp extra virgin olive oil
1 tsp soya sauce
1/2 tsp maple syrup
1/2 inch fresh ginger, grated
1/2 red chilli, deseeded & sliced


  1. In a large bowl, mix all the salad ingredients
  2. Make the dressing and mix well into the salad
  3. Serve the salad equally onto plates
  4. Enjoy with some crackers or toasted sourdough bread if desired
