When you are looking to satisfy your sweet tooth craving as well as experiencing a delicious crunch between your teeth, then this is the perfect cookie recipe for you.  Vegan Oat & Almond Ginger Cookies are much healthier than other cookie recipes as it doesn’t have a high sugar or fat usage and is also gluten free.

Makes 12 cookies

Ingredients

1 cup gluten free oats
1 cup desiccated coconut
1 cup almond flour
1 tsp ginger powder
1/3 cup maple syrup
1/4 cup coconut oil
Pinch of sea salt
1/2 tsp baking powder

Method

  1. Pre-heat oven to 180C
  2. In a large mixing bowl, add all the ingredients and mix until the mixture comes together
  3. Roll out 12 balls
  4. On a flat baking tray, lay out a piece of baking paper
  5. Roll out 12 balls and put on baking paper, making sure there is enough space between them
  6. Flatten each ball with the palm of your hand
  7. Sprinkle a few flakes of oats on top of each cookie and bake in the oven for 15 minutes
  8. Leave to cool before enjoying

 

Varieties:
–  for chocolate chip flavour, add 2 tbsp vegan chocolate chips and add to the mixture
–  for peanut butter flavour, add 2 tbsp peanut butter to the mixture
–  you can add some dried fruits, other nuts & seeds to the mixture as you desire
