I grew up enjoying this delicious salad as my mum is Russian and let us enjoy numerous wonderful and colourful dishes that she grew up with.

This salad was originally made with chicken and boiled eggs however, as you will see from the list of ingredients, I have replaced both of these with tofu.  Try it for yourself and enjoy.

Ingredients

4 medium potatoes, peeled & boiled
200g firm tofu (plain), chopped into small pieces
4 medium size gherkins, chopped into small pieces
1/2 cup peas
1 stalk celery, sliced thinly
2 heaped tbsp mayonnaise
1 medium carrot, peeled, chopped into small pieces & boiled until al-dente
Juice from 1/2 lemon
Salt & pepper to taste
Fresh coriander for garnish

Method

  1. Boil the potatoes until tender (not too soft) and leave to one side to cool down
  2. Boil carrot until tender (not too soft) and leave to one side to cool down
  3. Boil the peas for 5 minutes and leave to one side to cool down
  4. In a big bowl, cut the potatoes into bite-size pieces
  5. Add the carrots, celery, peas, tofu and gherkins
  6. In a small bowl add the mayo, lemon juice, salt & pepper and mix
  7. Add the dressing on top of the veggies and tofu and gently mix
  8. Garnish with fresh coriander
