This is a great choice when you are either a) not energetic in the mornings b) don’t have time (need to head to the office, get the kids to school or have a busy day ahead).

It is a simply recipe requiring minimal effort and so tasty as you can make it exactly how you like it and of course you can make a few batches at a time as, when kept in the fridge, the oats will keep fresh for 3 days.

Serves 2

Ingredients

1 cup oats (you can use gluten free oats, quinoa or chia seeds to create this dish – the choice of grains is yours)
2 cups plant based milk (I use oat) or you can use 1 cup milk and 1 cup fresh juice of your choice (apple or orange work well)
1/2 cup frozen berries (mixed or berry of your choice)
2 tbsp seeds of your choice
1 tbsp of chia seeds (for protein and added nutrition)
1/4 cup yoghurt (I use coconut for add sweetness and flavour)
Pinch of cinnamon
Pinch of sea salt

Method

  1. The night before the morning you would like to enjoy these oats, in a mixing bowl add all the ingredients, mix and then pour into a glass container (that has a lid) or 2 containers for ease of ‘grab’n’go’ in the morning and put into the fridge
  2. In the morning you can enjoy your porridge as it is, after giving it a mix, or add some fresh berries, banana, nut butter and a drizzle of maple syrup if desired.
  3. For added protein, you can top with a spoonful of your favourite nut butter, yummy.

This dish is really versatile where you can add pretty much what you like to it to make it tasty.
