This delicious dish is a great way to enjoy a snack when you want something creamy and warming or even as a breakfast dish.

Serves 4


1 cup risotto rice (short-grain brown rice also works well)
7 cups plant-based milk (almond) YES YOU WILL NEED 7 CUPS SO DON’T SKIMP ON THIS!
4 tsp brown/coconut sugar
1/2 tsp pumpkin spice (mix of cinnamon, nutmeg and cloves) and I added a pinch of ground cardamom
Pinch of sea salt
1 tsp plant based butter
2 tbsp mix dried vine fruits (raisins sultanas cranberries etc)


  1. Pre-heat oven are 170C
  2. Grease dish with vegan butter/spray oil
  3. Put all ingredients in glass or ceramic dish and mix
  4. Bake in the oven for a total of 1 hour 45 minutes, mixing after 1 hour

So delicious and creamy.  Enjoy with a splash of oat or soya cream – Yum!
