This is a nutritious, tasty and filling burger that can be enjoyed in a bun or with a delicious hearty salad.  Any way is great!

Makes approx. 10 burgers

Ingredients

2 cans of black beans, drained
1/2 cup white cabbage, finely sliced
1 red pepper, washed & deseeded and chopped into small pieces
1/2 cup sweetcorn
1/2 inch fresh ginger, grated
1 small red chilli, finely sliced

1/2 cup fresh coriander, finely chopped
1/2 cup breadcrumbs (use gluten free if needed)
1/2 fresh rocket leaved, chopped
1/4 tsp sea salt
Pinch of black pepper
1 tsp truffle oil (black or white is fine)

Flour for dusting (use gluten free if needed)
1 tbsp sunflower oil for cooking

Method

  1. Pre-heat the oven to 180C
  2. In a saucepan add the oil and start to saute the pepper, cabbage, chilli & ginger for 5 minutes
  3. Add the sweetcorn and stir for another 2 minutes
  4. In a large mixing bowl add the black beans, rocket, bread crumbs, fresh herbs, truffle oil, salt & pepper
  5. Add the cooked ingredients and with some gloves, start to mix together until the mixtures comes together
  6. Tear a sheet of silver foil and leave to one side, covered with flour (use gluten free if needed)
  7. Start to make 10-12 balls of the mixture and flatten into burger shapes
  8. Coat with flour
  9. In a frying pan, start to saute the burgers until browned on each side (approx 3-5 minutes on each side)
  10. Once cooked, lay the burgers out onto a flat baking tray and cook in the oven for 20 minutes

Delicious enjoyed hot or cold.
