In a rush for dinner?  Want something that is nutritious, tasty and filling?  Look no further.

This meal is made in less than 30 minutes and can be prepared as a ‘meal prep’ and the curry frozen for future use.

Serves 4

Ingredients

1 pack oyster mushrooms (depending on size, usually pack contains 4 mushrooms – can be purchased at Tesco), chopped into bite size pieces
1 can chickpeas (keep the brine for use later)
1 cup shredded white cabbage
2 tsp garam masala
1 tsp cumin
1 tsp turmeric
2 tbsp tomato puree
2 tsp curry powder (I use mild however you can use medium or hot depending on how hot you enjoy your food)
1 tsp sea salt
2 tbsp olive oil or 1 tsp coconut oil
1/2 cup fresh coriander, finely chopped

2 cups white Basmati rice (you can replace this for brown rice if desired)
1/2 tsp sea salt
1 tbsp olive oil or 1 tsp coconut oil

Coconut Raita
1 carton coconut or soya yoghurt sweetened with 1 tsp maple syrup
1/2 tsp sea salt
pinch of black pepper
1/4 tsp turmeric powder
1/2 of whole cucumber, grated (optional)
8 mint leaves, finely chopped (optional)

Method

  1. Wash the rice about 4-6 times until water runs clear
  2. Put rice in a non stick saucepan with 4 cups of cold water with 1/2 tsp sea salt & 1 tbsp olive oil or 1/2 tsp coconut oil
  3. Bring rice to boil and turn the heat down to low and simmer gently with the lid on for 30 minutes
  4. In a non stick saucepan, add oil and gently saute the cabbage for 4-5 minutes
  5. Add all the dried spices and mix
  6. Add the mushrooms and mix
  7. Add the tomato puree and 1/2 of the chickpea brine & mix
  8. Add the chickpeas and mix.  If the curry is a little dry, add more chickpea brine to give a ‘saucy’ texture
  9. Turn the heat down and simmer for 20 minutes
  10. Make the coconut & cucumber raita by mixing all the ingredients in a bowl
  11. Once the curry is ready, add all of the coriander except 1 tbsp which will be used for garnish
  12. When the dishes are ready, serve the rice topped with the curry sauce.  Add the raita to the side and serve with a fresh salad.
