To celebrate ‘National Pancake Day’, I have created my own recipe for a nutritious and delicious chia seed pancakes.  They are vegan and gluten free, totally filling & satisfying, so go on, treat yourselves!

Makes 9 pancakes


1 cup gluten free flour
1 tsp baking powder
1/2 tsp cinnamon
1 full tbsp chia seeds
Pinch of sea salt
2 tbsp sunflower/olive oil
1 cup – 1 1/2 cup water (you can use half plant based milk and half water to make your pancakes a little more creamier)
1 tsp sweetness of your choice (I use coconut sugar for pancakes)


  1. Mix all the ingredients together in a bowl until well combined
  2. Using a small frying pan and sunflower/coconut spray oil, fry a ladle of pancake mix until cooked
  3. Serve with fresh berries, banana, vegan butter (I use Vitalite) and drizzle with maple syrup


  • You can add a tablespoon of nut butter
  • Use any fruits you enjoy (preferable in season where possible)
  • You can enjoy these pancakes with savoury toppings:  tofu scramble, sautéed mushrooms, baked beans, tomatoes, Tamara tempeh,
