These cookies are really festive, both in colour and of course using the delicious sweet and sour cranberry.  This cookie is vegan and gluten free and full of Christmas joy.  Great to be made and given as a gift.

Makes 14 cookies


1.5 cups ground oats (gluten free)
1/2 cup oats (gluten free & not ground for texture)
1/4 cup coconut oil melted
1 cup ground almond
1/2 cup dried cranberries (the one with NO sugar added)
1/4 cup maple syrup
1/4 cup almond milk (may need more or less depending on how well the mixture comes together)
2 tsp vanilla essence
Pinch of sea salt


  1. Pre-heat the oven at 170C
  2. Mix all the ingredients together in a bowl until it comes together into a big ball
  3. Roll out into 14 balls and put onto a baking tray with a piece of grease proof paper ensuring you have space in between each ‘ball’ and as you lay the ‘balls’ out, push down gently to create a flatter cookie shape
  4. Bake in the oven for 20 minutes or until brown
  5. Leave to cool and enjoy.

–  Add vegan chocolate nibs/chunks to make it a little more ‘chocolatey’
–  Add 4 tbsp of desiccated coconut
–  Add 1 tsp of cinnamon powder to make it more festive in flavour
