This is a special dish, filling, satisfying and tasty.  It sure beats any ‘satay’ you can get in a take away shop and so much more healthier!  Tofu is a good source of protein and contains all eight essential amino acids. It is also an excellent source of iron and calcium.

Serves 4

1 block of firm tofu (280g):  cut into cubes
Satay Sauce
1/2 cup of coconut milk
1/4 cup hot water
3 tbsp smooth peanut butter (you can also use almond or cashew butter)
2 tbsp tamari soy sauce
1/4 tsp smoked paprika
1 tsp maple syrup or agave
Mix the sauce all together


  1. Mix all the sauce ingredients together until it forms a smooth paste
  2. Add tofu cubes to the paste, mix well and leave aside to marinade for minimum 15 minutes.  The longer the better and if you have time to prepare this the night before, all the better, keep refrigerated
  3. If you have skewers, put 6 tofu pieces onto each skewer.  If you don’t have any that is fine
  4. On a baking tray, oil spray the bottom and place the tofu pieces on
  5. Grill/bake in the oven at 180C for 20 minutes, making sure to check so they don’t burn.  After 20 minutes turn the tofu pieces over and bake for a further 10/15 minutes
  6. With the remaining sauce, put into a small saucepan and on a low heat, gently warm through.  You will find the sauce will thicken the hotter it gets so be careful as you don’t want it to burn
  7. Once the tofu pieces are ready, serve this with steamed veg.  I use broccoli, courgettes & carrots.
  8. Serve with brown rice to complete this healthy and nutritious meal
