Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Therefore, eating them more often than other types of potatoes can assist you in healthy eating.
6 medium sweet potato
3 tbsp olive oil/coconut oil
Salt & pepper to taste
Optional: 1/2 tsp smoked paprika
- You can leave the skin on the sweet potato or remove. If you remove the skin, keep to one side to make delicious crispy skins. Cut the potato in thin or chunky pieces
- In a bowl, add the potatoes, oil, salt & pepper and paprika. Rub all the ingredients together and lay the potatoes onto a flat baking tray
- Bake in the oven at 200C, for 20 minutes on one side, turn over and bake for a further 15 minutes (until tender and crispy)
This is great as an accompaniment to main dishes or delicious on it’s own with ketchup, mayo or a more extravagant coconut yoghurt, salt & pepper dip.
