When I came across this in a vegan cafe in LA, I knew that I would be re-creating this delicious dish on a regular basis as it is one of my childhood favourites and if I can be truly honest, it is even better then the ‘egg and milky’ ones I remember.  Try it – you won’t be disappointed I promise!

Serves 2


4 slices bread (I use sourdough or gluten free white)
2 bananas
1 cup soya milk (any plant based milk works)
1/2 tsp cinnamon
Pinch of nutmeg
Sunflower oil for frying


  1. In a bowl mash the bananas.
  2. Add milk
  3. Whisk in the spices
  4. In a frying pan heat the oil (approx. 3-4 tbsp oil)
  5. One by one, coat the bread in the ‘batter’ mixture
  6. Start to fry, browning on each side for approx. 2 minutes each side

Enjoy with fresh fruit, vegan ice-cream and a drizzle of maple syrup or simply delicious on its own with some coffee.
