These peanut butter cookies are so delicious, you won’t quite believe it. They are a healthier snack to enjoy at home, the office or on the go and uses a small amount of natural sugars to sweeten these beauties.
Makes between 8-14 cookies depending on size
1 cup almonds (you can use cashews, peanuts or walnuts)
1/4 cup tahini
4 tbsp maple syrup
4 tbsp raw cacao nibs
Sprinkling of cinnamon powder
Pinch of himalayan salt
Add all the ingredients into the food processor and blend until the mixture comes together. Empty into a bowl and then separate into balls and then push down flat with a fork into mini-cookie shapes. Keep refrigerated.
