VEGAN KALE, SWEETCORN & RED PEPPER SALAD
Serves 4 as a main dish or 8 as a side dish
2 large bags of kale
2 cans of sweetcorn
2 fresh red peppers chopped into bite size pieces
1 cup fresh parsley finely chopped
2 medium courgettes sliced and chopped into bite size pieces
Optional: 1 small red onion finely chopped
In a large bowl empty the contents of the kale and gently massage 1 tbsp of lemon juice and 1 tbsp of extra virgin olive oil into the kale. Massage the kale for 5 minutes so that the kale softens. Leave aside to rest for 10 minutes.
In a large salad bowl mix all the salad ingredients and the kale (after the 10 minute resting period).
Serve with a smoky salad dressing.
Smoky Red Chilli Salad Dressing
1 tsp smoked paprika
1/2 small red chilli pepper, seeds removed and chopped finely
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
Salt & pepper to taste
1 tsp black sesame seeds
Whisk the dressing ingredients and add to your salad.
