VEGAN AVOCADO & CHICKPEA SALAD
Serves 4 as a main meal or 8 as a side dish
4 medium avocados, remove stone and slice into bite size pieces
2 cans of chickpeas (in water) drained
1 mango (seeded and sliced into small pieces – optional) OR 1 yellow pepper chopped into small pieces
2 large bags of fresh spinach, rocket & watercress
Add all the ingredients into a big salad bowl and toss until well mixed.
I love a dijon mustard and lemon juice dressing which works perfectly with this salad.
Dijon Mustard Dressing
2 tbsp of dijon mustard
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1 tsp honey/agave/maple (optional for sweetness)
Salt & pepper to taste
Whisk the ingredients together and drizzle over the salad, giving it a good mix before serving.
