We are mid way into January and apologies for not ‘blogging’ earlier as I just realised my last post was on 1st January 2017!
As you may (or may not know), I had been visiting family in not so sunny California, having spent the festive period of Christmas and New Year with them, and only just having returned on 12th January. The last few days have been spent catching up on sleep due to jet lag and adjusting to the 8 hour time difference which I am slowly, very slowly, getting back to the ‘normal’ sleep patterns.
Yesterday saw us getting ‘back to business’ and with an influx of orders of our delicious fresh raw energy balls for customers and retailers as well as creating 6 raw ‘cheese’cakes which as you can imagine was some task and took some dedicated rolling action by our Virtuoso team (my mum, me and Tina – thank you!).
As we continue to meet your ordering demands, please bear with us in replying to emails and Facebook messenger messages as we are slowly working through these. I promise we will get through them this week!
Meanwhile, as I catchup both in the kitchen and with office matters and paperwork, to make sure I have good nutritious food at hand, this morning saw me making a delicious Borscht (Russian soup) with the help of my mum. This soup is not only tasty, it is fully loaded with fresh and organic vegetables and is so nutritious, your body is going to love you for it.
To make this at home, please see below my mums special recipe.
1 whole savoy cabbage (shredded)
2 medium carrots, sliced
1 stalk celery, sliced
1 green pepper, sliced & cubed
1 red pepper, slice & cubed
1 medium desiree potato, cubed (desiree is a red skinned potato which naturally has less naturally occurring sugar)
2 whole beetroot, sliced & cubed
4 whole bay leaves
1/2 cup chopped fresh parsley
1/2 cup chopped fresh coriander
10 whole black peppercorns
1/4 tsp Himalayan salt
4 fresh tomatoes, cubed
2 tbsp of organic tomato paste
1 tsp coconut oil/olive oil
You can add whatever vegetable and herbs that your heart desires.
Gently sauté ALL the vegetables in coconut/olive oil for 5 or so minutes. Then add approx. 8 cups of boiling water, add the herbs and spices, turn heat down and simmer for 1 hour (until all the vegetables are tender).
This is a filling dish that will tantalise your tastebuds, nurture your body and keep you going with natural energy throughout the day.
Enjoy with some raw crackers or organic wholegrain toasted bread and to make it that bit more special, add a drizzle of coconut or soya cream.
Yesterday I attended my first ‘Bird Table’ group meeting which coaches business owners in small groups, supplying the right coaching tools so we are able to develop and grow our own businesses with the input of others in similar situations. It was great to see that us small business owners all seem to struggle with similar issues and that we were able to bounce ideas around and share our strengths and how we could use our strengths to better understand our goals and put these into practice. This is a monthly group and am already looking forward to the next session, that is after I have put some time aside to do some of my homework!
Furthermore, this month has started off to be one of excitement and growth. I have decided that in addition to what I currently am able to offer my customers (fresh cakes and healthy treats), I would love to be able to offer information, workshops and recipes supported by my understanding of what nutrition truly means in terms of foods we should eat more of and less of, and the benefits different food groups have to offer us. Although I know how to ‘make, bake & cook’, I want to understand the benefits of all that I do and offer so that both myself and my customers can benefit from making healthy choices.
With this in mind, I am looking to attend some courses to educate myself further to ‘practitioner’ level in ‘Vegan & Vegetarian’ Nutritional Therapy as well as becoming a Macrobiotic Cook & Health Coach. These sure are exciting times as I hope to infuse the above with my existing NLP Life Coaching skills to bring you a truly HOLISTIC ‘Healthy Body, Healthy Mind’ concept that you will be able to tap into all aspects of your life, from what to eat, how to eat, when to eat to the impact/benefits on our bodies.
